SWEET CHILLI TUNA AND SPRING ONION BAKED POTATO
I was never a fan on tinned tuna before I discovered the entire isle at Coles (Australia’s main supermarket chain) devoted to different flavours of tuna. Since then I’ve mixed tinned with almost every flavour I can think of, but after two years sweet chilli, spring onion and lime has emerged as the hands down favourite. It’s great in a sandwich but also works really on top of a nice warm baked potato.
1 Large Baking potato
1 Small tin of tuna
1 Spring onion, sliced
3 Tbsp sweet chilli sauce
juice of half a lime
1) Prick the potato a few times with a fork and place in the microwave for 4 minutes. Turn the potato over and continue for another 4 minutes or until the potato feels soft when pressed lightly. Leave to cool.
2) Mix the remaining ingredients and seaon to taste, before filling the warm potato.
