Sweet chilli stir fry
This week, we are coming into the middle of summer in Europe. I’m posting my recipe for a fresh and light stir fry which is cheap and easy, giving you more time in the sun and less time in the kitchen.
Because lets face it .. it probably won’t last all that long.
Ingredients: serves 1 (£1.51)
1/2 Pack of mixed stir fry vegetables
1 100ml Bottle of sweet chilli sauce
3 Sliced spring onions
150g Pack of fresh noodles (or reconsituted dried)
2 Tbsp of oil
if using fresh noodles, sit them in a pan of hot water and let them separate out, Drain and set aside. If you’re using dried noodles then prepare them as per instructions.
Heat the oil in a frying pan or wok and add the vegetables and spring onions.
Keep the heat high and fry until the vegetables are soft and starting to colour. Add the sauce and let it come to the boil in the pan.
Take the pan off the heat and toss through the noodles.
If you like a bit of spice, you can always add a little sliced chilli at the end.
