When I was travelling Australia the 7/11 corner shops would sell little cakes called lamingtons, basically jam filled sponged dipped in chocolate and coconut. I became a little obsessed and after leaving Aus I never saw them again, which is my current first world nightmare. The good news is that mixing jam with snowball cakes gives a similar dessert and this next jar is devoted to my holiday romance with the humble lamington cake.
1 Small tub of snowball cakes
1 Small pot of cream
!/2 Jar raspberry jam
1 Small bottle of chocolate sauce
1/2 Pack of chocolate cookies
1) Whip the cream with a whisk, or just by simply shaking the container (with the lid on) vigoriously.
2) Tear the snowballs and cookies and place a third at the bottom of the jar.
3) Build the layers evenly until you reach the top and finish with a few peices of snowball and a drizzle of jam.
