This recipe is a known all over the world as a French classic and it shows that even the most simple things can be delicious. You could further keep the cost down and make it vegetarian by leaving out the Tuna, just replace with a squeeze of lemon juice and a good pinch of salt.
Ingredients for 1 (£2.77)
3 Small potatoes
1 45g Tin of Tuna
1o Green beans
1/2 A red onion, sliced
4 Tbsp french dressing
3 Tbsp chopped parsley or chives
Chop the potatoes into cubes and place in boiling water until tender.
Trim the ends off the green beans and when removing the potatoes, cook the beans for 4/5 minutes in the same water.
Place both the potatoes and the beans in bowl and cook the egg in the boiling water (6 minutes for soft boiled or 10 minutes for hard boiled)
While the egg is cooking, put the tuna in the bowl with the potatoes, beans, dressing, onion and herbs. mix well with a spoon and place into serving bowls.
Remove the egg and run it under cold water for a few minutes before peeling, cutting in half and placing on top of the salad.
