Quinoa tomato and rocket salad
This is a quick and healthy salad that is great for lunch or late dinner. I normally cool the quinoa right down in cold water after cooking it, but you can leave it hot which will melt the feta cheese nicely by the time it gets to the table.
2 Handfuls of cooked quinoa
Half a red onion, sliced
1 Tbsp. oil
5 baby tomatoes, quartered
1 Handful of feta cheese
1 Handful of rocket
2 Tbsp. salad dressing
1) Heat a frying pan on the stove and add the sliced red onion, cooking until they are nice and caramelised. Remove from the pan into a bowl and leave to cool.
2) Once the onions are cool, mix with the quinoa, baby tomatoes and crumbled feta cheese.
3) Toss the rocket with the salad dressing and serve with the quinoa mix on top.
