Potato Omelette

A non stick pan really helps with this recipe if you have find one. But if all your pans look like they’ve been sitting at the bottom of the atlantic for five years then just add a little extra oil or butter to the pan before puting in the potatoes. You can also make sure that the pan is nice and hot while adding the eggs. This should limit how much it sticks.

Ingredients

5 Small potatoes, thinly sliced

3 Tbsp olive oil

1/2 Sliced onion

2 garlic cloves, crushed

Half a hand of chopped parsley

2 eggs, beaten

A handful of feta and chopped parley to garnish

Method

1) Boil the potato slices in a large saucepan for 5 minutes, drain and set aside

2) Heat the oil in medium non stick frying pan and cook the onions and garlic gently until soft

3) Add the potatoes and parsley to the pan and cook gently for 5 minutes before adding the beaten eggs and a pinch of salt

4) Cook over a low heat until the eggs are set through and turn out onto a plate, finish with the feta and parsley
