I know chickpeas aren’t the most exciting ingredient in the world, but since i’ve been not getting up until later in the day recently, i’ve discovered the joy of brunch. This definitely counts as a healthy meal, but the rich tomato and salty cheese give a welcome pizza vibe to somthing that I normally wouldn’t eat. For a vegan version you can just leave out the cheese too so it’s a cheap and protien rich meal for those on limited diets.

Ingredients

1/2 A Red Onion

1 clove of garlic

1/4 Tin of Chopped Tomatoes

1/2 Tin of Chickpeas

3 Tbsp Ketchup

Handful of Chopped Parsley

Half an Avocoado, sliced

2 slices of toast

Handful of Feta cheese

Method

1) Fry the onion in a little oil until soft and then add the garlic, cook for one minute before adding the tomatoes, ketchup and drained chickpeas.

2) Cook the tomato sauce for a few minutes until it has thickened enough to coat the chickpeas.

3) Place the sliced avocado over the toast and top with the hot chickpea mix and crumble over the feta cheese.
