Halloumi and bacon board.
This is a great recipe for sharing with friends and there is barely any cooking or preperation involved. Perfect for a lazy day when you still want to eat like a king.
250g Pack of halloumi
4 rashers streaky bacon
Hand ful of rocket or leftover salad
Bunch of baby tomatoes
3 flatbred or Pitta breads
1 Recipe homemade hummus
With the bacon
Heat a frying pan with 1 tbsp of oil. Add the bacon and leave to fry gently, on a soft sounding sizzle for about 2 minutes on each side until golden and crispy. Remove the bacon and leave the pan on the hob ready for the halluomi.
With the halluomi
Slice the cheese into roughly 1cm thick pieces and fry in the leftover bacon fat on a high heat for about 1 minute each side or until golden, remove and set aside.
With the tomatoes
Place the tomatoes in the same pan with a pinch of salt and fry gently until the skins of the tomatoes start to split open. Alternatively bake in the oven drizzled with a little oil for about 5 minutes on 180c
Place everything on a big wooden boad or plate with the salad, a bowl of hummus and the warm pitta breads, sit around the kitchen table to enjoy with friends.
