Creamed mushroom toast
Cream is not something you will tend to have left over, but the other ingredients are very common in a hostel environment. It’s worth a few extra pennies to treat your self to this for breakfast or brunch.
If you have any leftover eggs, it’s a great idea to add a soft poached egg on top and have it burst over the cheesy and creamy mushrooms.
Ingredients – £1.08pp (serves 1)
2 slices of bread, toasted
5 mushrooms (button or chestnut are ideal)
1/2 mug of cream
Half a mug of grated cheddar cheese
2 Tbsp. of dried herbs from the free food shelf (optional)
2 Tbsp. of oil
Place a pan on the stove on a high heat, add the oil and fry the mushrooms until they start to colour.
Add in the cream and leave to bubble until the mixture looks thick and the cream coats the mushrooms.
Take off of the heat and stir in the herbs, cheese and a good pinch of salt. Spoon on top of the toast and serve.
