Chicken tikka subs
Forget the cheese and ham toasties, these are just as quick but much, much tastier. The lime is optional, but a nice squeeze of juice will really add a nice pop of acidity.
1 Bread Roll
1 Breast of Chicken
3 Tbsp Curry Paste
5 Tbsp Natural yogurt
2 pinches of cumin
3 Pinches of Salt
1 Sliced Tomato
1) Roughly slice the chicken and mix with the curry paste and a pinch of salt, cover an leave in the fridge preferably for an hour, but if you’re short on time a few minutes will do.
2) mix the yogurt, lime, cumin and 2 pinches of salt together in a small bowl and set aside.
3) Fry off the chicken in a little oil until the meat is cooked and the spices start to char. Fill the roll with the tomato and any other salad you like before adding the hot chicken and a good few spoons of yogurt dip.
