Bacon and potato salad
This is one of my favourite dishes for potatoes, taking a side dish into an amazing main meal with a few bits and pieces. It doesn’t get much easier and cheaper than this. You can pretty much use up what you have with this one, but the ingredients in this version are ideal.
6 New potatoes or 2 large
2 rashers of bacon
1 Handful of Gherkins
4 Tbsp Mayonnaise
1 Tbsp of wholegrain mustard
1 Handful of leftover fresh or dried herbs
1 Tbsp of oil
1 Cut the new potatoes into halves and boil on the stove until tender. Drain and leave to cool.
2 Meanwhile fry the sausages in a frying pan with 1 Tbsp of oil. Just before the sausages are ready, add the bacon and continue until both are cooked though. Set aside and leave to cool.
3 Roughly chop the gherkins and the herbs. Place the mayonnaise, gherkins, herbs and mustard into a large bowl and add the potatoes, mix lightly.
4 Slice the sausages and chop the bacon into small pieces, add this to the bowl and fold through.
Season with salt and pepper before serving warm.
